MEditerranean Chickpea Salad

A fresh, protein-rich salad with vibrant Mediterranean flavours.

Ingredients

  • 1 cup cooked chickpeas 
  • ¼ cup FlavourBinge Sun-Dried Tomatoes, chopped 
  • 1 tsp FlavourBinge Dehydrated Garlic Granules 
  • 1 cucumber, diced 
  • ¼ red onion, finely sliced 
  • ¼ cup feta cheese, crumbled 
  • 2 tbsp olive oil 
  • 1 tbsp lemon juice 
  • 1 tsp oregano 
  • Salt and pepper to taste 


Method

  1. Rehydrate garlic granules with 1 tbsp warm water for 5 minutes. 
  2. Combine chickpeas, cucumber, onion, feta, and sun-dried tomatoes. 
  3. Whisk olive oil, lemon juice, garlic, oregano, salt, and pepper. 
  4. Toss everything together and serve chilled.
